our story

The dream began more than a decade ago for our founder and brewmaster Dan Payson. A trained architect at the time, he started brewing his own beer in 2007 in Seattle and soon started his journey from passionate beermaker to professional brewer. While he earned a diploma in brewing science and engineering, Dan learned his craft from his mentor, an award-winning Seattle brewmaster.

Dan moved his family to the Midwest a number of years ago. He helped launch two of the area’s best brewpubs as brewmaster, becoming an award-winner himself before deciding to open his own brewery. His vision: Honor the beer. Honor the community. Bring them together in a fun, completely unpretentious environment.

Dan has mastered the traditional beers he loves—English bitters and milds, German pilsners, West Coast IPAs and other ales and lagers—by staying true to the style and insisting on authentic, top-tier ingredients for consistent, world-class quality. You’re going to love his beers.

We designed our beautiful new building to offer a family-friendly blend of beer hall and beer garden. Our goal is simple: to provide an open, inviting place to relax with our beers among a laid-back community of family, friends and neighbors.
